This course is specifically designed for those who have some previous cookery experience and wish to consolidate and expand their practical and theoretical knowledge. This is a career oriented course and is ideal for the mature student.

Course Duration

Two terms commencing September, January or April.

Qualification to be gained

Tante Marie Cordon Bleu Diploma.

Entry Requirements

Age 18 years and over.
Some cookery knowledge required.
Overseas students need intermediate English (equivalent to TEFL 450).

Course Composition

For an in depth review of the Intensive Diploma Course, covering course composition, tuition and exams please request a copy of the Tante Marie CD. The syllabus follows that of the three term Diploma course and the same examinations are taken. Basic techniques, which candidates are expected to have learned previously, are omitted, but the essential principles of cooking are briefly reviewed. Otherwise the course includes all the practical and theoretical elements of the three term Diploma course. See sample recipes.

 

The Tante Marie Wine Certificate

As in the three term Diploma course, students benefit from this three day course, conducted by a Master of Wine and featuring tutored tastings. Students are prepared for the Tante Marie Wine Certificate examination.

The Foundation Certificate in Food Hygiene

A one day seminar, conducted by a food safety consultant who has trained many of the UK's environmental health officers, leads to an examination set by the Chartered Institute of Environmental Health. Students are taught the dangers associated with food handling and storage and how to avoid them. A certificate is awarded to those who pass the examination.

Examinations

Intermediate and final examinations are taken as for the three term Diploma course.

The Tante Marie Diploma

On successful completion of this course, the Tante Marie Cordon Bleu Diploma is awarded, showing that the student has attained the required level of proficiency, through both practical and written examinations, and can confidently be expected to maintain Tante Marie's high standards of culinary expertise.

The Diploma is recognised worldwide as a professional qualification and an assurance of quality. Distinctions and credits are only granted by the examiners to those whose work deserves special merit. Students who fail any of these courses will receive a statement of achievement.

Work Experience for overseas Students

Owing to Tante Marie's reputation for excellence and high standards its students are highly sort after in all areas of the hotel and restaurant industry. For those overseas students wishing to gain work experience after graduating with our Diploma, Tante Marie can usually offer placements at some of the UK's most prestigious hotels and restaurants, subject to visa requirements.

There is a scholarship scheme to assist a limited number of students. Please refer to our Overseas Scholarships (worth up to 30% of fees).

Our course fees are all inclusive - our intensive diploma course fee includes courses leading to the Foundation Certificate in Food Hygiene and the Tante Marie Wine Certificate, chef's uniform, professional knife set and recipe file.

Hours: 9.30am to 4.30pm, approximately, Monday to Friday.

A non-refundable deposit of £900 is payable at the time of enrolment. This will be deducted from the course fee, and can be transferred to another Tante Marie course provided such a course commences within 12 months of the transfer, but cannot be returned in the event of cancellation.

Students are strongly advised to take advantage of the School Fees Remission Scheme which will enable them to recover fees against time lost through illness or accident. Details are available from the School Secretary on request.
