Al chose a career in food at an early age and came to Tante Marie at aged 18. After studying with us he gained a position working for the Roux Brothers at le Gavroche as well as some of their other establishments. To this day, the Roux family are among his great ‘food heroes’, as is Carl Shillingford who mentored Al when they both worked at the White Hart Inn. This fantastic ‘hands-on’ industry training has been of benefit to countless Tante Marie students since he returned to us as a teacher in 2008.

An inspired and talented cook, Al rightly deserves the recently-appointed role of Academy Chef. He is a fountain of wisdom on all aspects of culinary preparation and presentation, and he works very hard to ensure that the students always prepare and present the best possible food – average is never acceptable.

Al can best be described as focused and passionate about his trade, and he is never happier than when he is perfecting his culinary skills – particularly when it involves butchery, game and fish – or more especially, chocolate!
