DEMONSTRATION CONTENTS

June 9th : Lebanese inspired mezze madness!

  • Recipes to include classic hummus, falafels, kibbeh made with minced lamb, smoked aubergine salad and baklawa

June 16th : Al fresco

  • BBQ chicken wings with celery and blue cheese dip

    Maple glazed hot smoked salmon, Rice salad with cucumber and dill, Asian style slaw

    Peach, raspberry and almond meringue roulade with brown sugar

June 27th :  Little piggy went to the butcher

This demonstration evening is the start of a Level 5 student's final examination, 'Festival of Pig'. In Spring 2016 Graduate Chef Matthew Brook sourced a pig from Little Ellis Farm in Chobham and now the time has come to showcase its butchery by master butcher Ian Wood. Ian will break down the carcass into all its individual cuts. After this evening the pig will turn into an array of delicious dishes and sold to the public on our very special Festival of Pig menu.
