This course runs over 4 consecutive Wednesday evenings from 6.45 until 9.15pm. Each 4 week course covers a different basic skills set and is designed for those who are looking to take their cooking to the next level, by building a portfolio of skills and knowledge over time.
This course covers knife skills - over 4 weeks, students will learn the most basic, fundamental skill in the kitchen - how to use knives effectively. Having sharp knives is one thing; knowing how to use them properly is completely different and on this course we unlock the secrets of using these fundamental tools of the trade.
Here is an example of what a typical Wednesday Workshop Knife Skills course might include:
Week 1: Knife care and sharpening. Basic vegetable prep and cuts. Slice, dice and finely chop. How to chop herbs without ruining them.
Week 2: Knife skills for more complex dishes. Advanced cutting - julienne, brunoise and having the discipline to do them properly.
Week 3: Knife skills for fish preparation.
Week 4: Knife skills for meat preparation.
