Recipe of the Month for December Sweet and Sour Red Cabbage
Shred the cabbage finely and discard the hard stalk. Melt the butter in a large saucepan, add the onion and sweat until it is soft. Add the cabbage and stir well. Stir in the apple and sugar and cook gently for 10 minutes, stirring from time to time until the juice is running from the apple and cabbage. Add the lemon juice, vinegar and 1 teaspoon of salt, cover with greaseproof paper and the lid and simmer gently for 45 minutes to 1 hour or until the cabbage is tender. Taste and adjust the seasoning and serve in a hot vegetable dish. N.B. If preferred, the cabbage may be cooked in the oven, Gas Mark 4, 180ºC for the same amount of time. |
