MINCE PIES WITH ORANGE PASTRY

For the orange pastry:

225g (8oz) plain flour
75g (3oz) icing sugar
175g (6oz) butter
finely grated rind and juice of
half an orange

For the filling:

100g (4 oz) full fat cream cheese
25g (1oz) caster sugar
175-225g (6-8 oz) mincemeat

To finish:

milk to glaze
caster sugar to dust

To make the pastry: sift the flour and icing sugar into a large bowl. Add the butter cut into cubes and rub together with the fingertips until the mixture resembles breadcrumbs. Stir in the grated orange rind and mix to a dough with the orange juice. Roll out the pastry on a floured board and cut into circles. Line half the circles into patty tins - this amount should make 12-16 mince pies.

Mix together the cream cheese with the caster sugar. Place a little mincemeat in each case and a little cream cheese mixture on top. Dampen the edges of the remaining pastry circles and place one on top of each mince pie. Seal the edges well and make a small hole in the centre with the point of a knife. Brush the tops with milk and sprinkle with caster sugar.

Bake gas mark 6/200C for about 20 minutes or until golden brown. Allow to cool for 5 minutes in the tins and then remove carefully and cool on a wire rack.

These are so good the only way to keep them is in the freezer! Defrost just before eating.
