4 Week Essential Skills

The Tante Marie 4 Week Essential Skills course is perfect for amateur cooks looking to gain a competent understanding of foundation level cookery and a Level 2 Award in Culinary Skills.

During the course students will learn a range of essential, culinary skills across several areas of cookery and leave with the ability to cook good food, for all occasions and in any environment.

What you will learn

Your course will begin with an introduction to working in a professional kitchen environment, incorporating practical skill development such as knife skills, before moving on to the foundations of basic cookery.

Lessons are designed to include recipes and techniques that will build your understanding of how food changes as you cook. This will enable you to make adjustments and correct mistakes as you go on to produce your own recipes and menus.

You will be taught in a small group of like-minded students and the majority of your time at the Academy will be spent in our state of the art kitchens.

Supporting theory lessons are included covering topics such as Menu Planning, Table Setting, Costing & Budgeting and Seasonality. Students also have exclusive access to the Academy’s Virtual Learning Environment where you can review course notes online and receive teacher support. If you are interested in using your new skills for working a ski season, there is also access to our bespoke ‘Guide to Chalet Hosting’.

During your time at the Academy you will take part in a number of fun menu planning and cooking exercises. Using skeleton recipes and taking direction from your teacher, you will use the skills you have learnt to plan and produce meals such as breakfasts, 2 course lunches and 3 course dinners.

These informal projects are designed to be a relaxed and fun end to your time at the Academy, with constructive feedback provided by your teachers to help your development in the kitchen.

A Level 2 Award in Food Safety in Catering is also included in this course, together with the CTH Level 2 Award in Culinary Skills qualification.



Coursework & Homework

There is no homework assigned on this course, but we encourage all students to spend some time practicing cooking dishes at home.

Our Virtual Learning Environment offers students a state-of-the-art resource which they can refer to during their course. We encourage all students to regularly use this resource, available online or via a handy phone and tablet app.

What’s included?

As with all our courses, there are no hidden extras. The course fee includes everything you need to complete your course. We do not charge extra for recipe books, uniform or knives. The course fee includes:

  • Professional chef’s whites
  • Chef’s apron
  • Chef’s knives
  • Tante Marie Recipe file
  • All ingredients and equipment
  • Lunch each day

Access to the Academy’s Virtual Learning Environment is available to all students prior to, during and after their course. This allows them online access to course theory notes, instructional videos and teacher support.

In addition to the above, students will benefit from use of our extensive library of cookery books as well as ongoing careers advice and support from our knowledgeable teachers and support team.

CTH Exam Fee:

The exam awarding body charge an assessment and certification fee. This is out of our control and is the only cost not included in our course fee. The CTH Exam Fee is currently £135 and is an optional cost for those wishing to gain the CTH Level 2 Award in Culinary Skills.

Exams & Assessment

Some classes include elements of built in assessment during which we assess mastery of the required skills for the Level 2 Award in Culinary Skills.

Students who complete the 4 Week Essential Skills in cookery, are well placed to pursue work in numerous kitchen environments and are often in high demand from ski chalet employers, while many graduates choose to apply their new skills whilst working a gap year.

Upon completion of our shorter courses, students often find that they which to take their new skills to the next level and gain a professional cookery qualification. This course has been designed to allow such students to stay on at the Academy and progress their studies on to our 11 week Cordon Bleu Certificate course.
