Part-Time Essential Skills of Cookery

The Tante Marie Part-Time Essential Skills course consists of 28 evening classes spread over a number of weeks. Perfect for those looking to gain foundation skills in cookery and a Level 2 Award in Culinary Skills.

During the course students will learn a range of essential, culinary skills across several areas of cookery. Students will leave with the ability to cook good food, for all occasions and in any environment.

What you will learn

This course follows the same curriculum and as our 4 week Essential Skills, but is broken in to 28 manageable evening classes, perfect for those who have commitments during the day. Classes run on a rolling basis over a 12 month period, with entry points set at various times over the year to allow maximum flexibility to new students.

Classes run on Tuesday evenings from 6.15pm to approximately 8.45pm. Each block of classes will follow the academic calendar, breaking for Easter and summer.

The Essential Skills courses are perfect for students of all ages and no previous experience is necessary. Sixth form students preparing for university or a working gap year, or home cooks looking to improve their culinary skills who have work commitments during the day – the Essentials Skills course offers everyone skills to last a lifetime!

Each week you will cover a different set of skills and recipes, incorporating practical skill development such as knife skills and moving on to the foundations of basic cookery.

Lessons are designed to include recipes and techniques that will build your understanding of how food changes as you cook. This will enable you to make adjustments and correct mistakes as you go on to produce your own recipes and menus.

You will be taught in a small group of like-minded students and all of your time at the Academy will be spent in our state of the art kitchens.

A Level 2 Award in Culinary Skills qualification is also included in this course.

Coursework & Homework

Although we encourage all of our students to spend time practicing their new skills in their kitchen at home, there is no homework or coursework set on this course.

What’s included?

As with all our courses, there are no hidden extras. The course fee includes everything you need to complete your course. We do not charge extra for recipe books, uniform or knives. The course fee includes:

  • Chef’s apron
  • Chef’s knives
  • Tante Marie Recipe file
  • All ingredients and equipment

CTH Exam Fee:

The exam awarding body charge an assessment and certification fee. This is out of our control and is the only cost not included in our course fee. The CTH Exam Fee is currently £135 and is an optional cost for those wishing to gain the CTH Level 2 Award in Culinary Skills.

Exams & Assessment

Some classes include elements of built in assessment during which we assess mastery of the required skills for the Level 2 Award in Culinary Skills.

Students who complete the Part-Time Essential Skills in cookery often choose to apply their new skills whilst working a gap yearand are often in high demand from ski chalet employers, while others put them into practice during a ski season.

Upon completion of our shorter courses, students often find that they which to take their new skills to the next level and gain a professional cookery qualification. This course has been designed to allow such students to stay on at the Academy and progress their studies on to our 1 term Cordon Bleu Certificate course.
